How to Make Homemade Pasta

There is nothing as delicious as fresh pasta. Once you’ve tasted truly fresh pasta you won’t want to go back to eating preserved noodles from the store. And because it’s so easy to make fresh pasta you won’t need to. Here’s what you need to know to make fresh pasta at home.

What You Need To Make Fresh Pasta

Great pasta starts with great dough. And to make pasta dough you only need eggs and flour. That’s it. Of course, if you use high-quality sifted flour and the best-quality eggs your fresh pasta will taste the best. But any eggs and any flour will do.

The most recommended flour to use is Tipo “00” flour. It’s a fine-milled Italian wheat flour that creates incredible pasta. But you can also use King Arthur or other easily available flours. A standard pasta recipe is to mix 300 grams of flour with three eggs and one egg yolk.

How To Make Pasta

There are just three steps that you need to follow to make pasta. Pasta isn’t complicated to make, but the ingredients matter and so does the love you put into the making of the dough. When pasta dough is made with love it tastes so much better.

Making The Dough

To make pasta dough you will need a wide and flat workspace where you can make a mess. Clean off the space and get it ready. If you want to avoid making a mess, put down parchment paper or cling wrap then make the dough on top of that so you can easily throw it out and avoid a big mess.

Put the flour in a mound on your workspace. Dig a small well in the center. Crack the eggs into that well and beat them with a fork. Start working the flour into the egg mixture until a dough starts to form. If it’s too dry, add a drop of olive oil. 

Once you have formed a lump of dough cover the dough or wrap it in plastic wrap. Let it sit for 10 minutes. Then, remove the plastic and knead it for about seven minutes. After it’s kneaded and it’s soft form it into a tight ball, wrap it in plastic, and let it rest for 30 minutes at room temperature.

Rolling It Into Sheets

This is when you will need your stand mixer with the pasta attachment. Dust everything with flour, including your workspace and a cookie sheet. Cut the dough into four equal pieces. Flatten one, and then put it through the roller attachment on the mixer on the wide setting. Roll it several times to make it flat. Then place the sheet of pasta dough on the cookie sheet or tray and do the same to the other three lumps of dough. 

Cutting The Dough

To cut the dough you just made use the pasta cutter. You can make any type of noodle that you want using different settings on the pasta cutter.
